Top 5 Crockpot Sandwich Recipes for Summer

Summer is finally here and I’m almost embarrassed at how many sandwiches my family has eaten since the weather turned warm. But I’ve mentioned before that my house is on the small side and can heat up quickly when the oven is turned on. And even when I use just the stove top. Add that to the increased outdoor activities and dinner can be a challenge. So I turn to the crockpot.

To me, crockpot cooking smacks of soups and stews and brings to mind all the pots of chili I cooked in it over the winter. But . . . how about crockpot sandwiches? Here are my top five recipes for cooking sandwiches in the crockpot. Okay, so maybe not the sandwich itself, but the filling for them.

Pesto and Mozzarella Chicken

I found this recipe on Pinterest and it was a definite success. I cooked it in the winter time and served it with spaghetti and garlic bread. But for the summer, it went on club rolls and a side of chips.

So simple, it’s chicken breasts sprinkled with pesto mix and a package of ranch dressing. Add butter to the pot and cook on high for just a few hours.

Barbecue Chicken Sandwiches

Another too-easy-recipe. Boneless chicken breasts in the crockpot. Season with salt and pepper and maybe a little garlic or whatever you prefer. Once they’re cooked, add your favorite barbeque sauce. Pulled Pork Sandwiches

Pork roast or tenderloin in the crockpot. Serve on buns with your favorite chips and BBQ sauce. (And at my house coleslaw. Can’t have a pulled pork sandwich without coleslaw.) If you need a jump start for your pork, here’s a great recipe:

Grab your beef roast and try this recipe for shredded beef tacos made in the crock pot. Or make your own. Roast and taco seasoning or salsa makes for a great taco filler on those warm summer days. Because after all, what is a taco but a Mexican sandwich?
