21 Days of Favorite Family Recipes | Day 16 – White Chicken Chili

Crockpots work wonders during the holiday, especially when you’re in need of a little extra time to spend with loved ones, to shop for those last-minute gifts, or to pass out those cookies you already baked to neighbors. My favorite crockpot recipe in the winter is definitely this white chicken chili, which I got from a family-friend, Kathy. Whether you like it spicy or mild, you can customize the recipe for your taste. If there’s one part you absolutely cannot skip, though, it’s the cilantro and pepper jack cheese!

White Chicken Chili

1 pound diced and cooked chicken
1 medium onion diced and cooked
1.5 tsp garlic powder

Cook the three above together until chicken is done

Add chicken mix and below ingredients to crockpot.

14-16 ounces of chicken stock
2 cans great northern beans (15 oz)—rinsed/drained
½ cup carrots diced
½ cup half and half
1 tsp oregano
¼ tsp red pepper flakes
4 oz can diced green chilies (mild—optional)
cumin dash
1 can cream of celery soup
1 small can Mexican corn (optional but festive!)
Diced potatoes (optional; makes it more like chowder)

Cook in crockpot all day. Serve with shredded pepper jack cheese and/or chopped cilantro. ENJOY!
